"Buckwheat and Corn Pancakes"
These lovely pancakes can be served with vegetables and spaghetti sauce.
Ingredients
1 tbsp egg replacement
1 tsp baking powder replacement
1 cup rice flour and buckwheat flour (to make up one cup)
1 tsp glutinous rice
Rice Milk to wet (about ¾ cup)
1 tsp Melted Canola Oil or Sunflower Oil
Add Corn Kernels - about ½ cup
Method
Stir all ingredients together and fry like normal pancakes.
"Baked Eggplant with Olives and Tomatoes (Parve)"
Ingredients and Method
2 eggplants, sliced, salted, and drained for 30 minutes
6 cloves garlic, chopped
1 large onion, chopped
3 tablespoons olive oil
juice of 1 lemon
16 ounce can plum tomatoes, drained and chopped or equivalent amount of
fresh plum tomatoes, blanched to remove skin and chopped
18 black olives, drained, pitted and chopped (about 1/2 can)
3 tablespoons fresh parsley, chopped fine (divided)
2 teaspoons fresh thyme (chopped)
salt and freshly ground pepper to taste
"Broccoli and Rice Casserole"
Ingredients
(You decide on the quantity)
Broccoli
Rice
Carrot
Onion
Sesame seeds
Method
Pre-heat oven to 150 degrees C or 300 degrees F for 10 - 20 minutes
Steam Broccoli
Cook Rice
Coarse grate carrot and onion and then saute.
Put in a baking dish. Sprinkle with sesame seeds.
"Zippy Zucchini with Pasta"
Ingredients
1 cup of pasta (we use vegetable rice pasta)
1 onion
3 cloves garlic
2 zucchini (we have small ones in New Zealand)
Boiled Water from rice and vegetable pasta
Method
Pasta: Cook as instructed on the packet.
While the pasta is boiling, sauté the onion and garlic.
Slice the zucchini to your preferred thickness.
Add to the onion and garlic.
Cook the zucchini until brown on both sides.
Take about a quarter to a half cup of the boiling pasta water
and pour over the zucchini mixture.
This will thicken the zucchini mixture.
Stir and serve with the pasta.
"Dee Dee’s Big Salad"
Ingredients
Lettuce
Tomatoes
Celery
Cooked Fish: you can use any fish you like or leave this out if you don’t like fish.
Zucchini
Corn
String Beans
Avocado
Nuts: the ones you are not allergic to.
Cooked Pasta (we use vegetable rice pasta)
Any other vegetable in season
Method
Season with your favourite seasonings.
Mix altogether and serve with your favourite dressing or just plain.
"The cooked version of Dee Dee’s Big Salad"
Ingredients and Method
I use the Zippy Zucchini recipe as a basis, except I use only a half cup of pasta.
In the fry pan, keep adding all your favourite vegetables.
I also add pieces of fish to the mixture.
When cooked the way you like it, add the boiling pasta water and thicken the mixture.
I then add the pasta.
Mix the salad carefully and serve.
"Irwins’Grilled Eggplant"
I purchased a cast iron grill, it is nothing more than a fry pan
with ridges. It is also a lot less expensive than the fancy ones.
Ingredients
1 tablespoon water
2 tablespoon balsamic vinegar
2 tablespoon extra virgin olive oil
Method
I coat the eggplant slices with the mixture, add salt and pepper.
Place on grill and repeat the coating on the other side. Use as a side
dish or sandwich with a green and a slice of tomato.
You can use the same mixture on a thick slice of bermuda onion and
a tomato. I placed these on a bed of spinach drizzled with the same mixture.
I thought this was a great salad.
"Irwins’ Eggplant Appitizer"
Ingredients and Method
Prick an eggplant with a fork or knife all over.
Place in broiler, every now and then turn the eggplant.
When done, use your imagination, remove and place a weight on the eggplant.
I use a bowl filled with water and tilt the pan on a slight angle.
This allows the liquid to drain.
When cool, peel the eggplant.
Add chopped scallion, garlic, olive oil, salt, pepper, sun dried tomatoes,
pimentos; chop altogether and adjust taste.
Obviously you can add or delete any item. It is an interesting use of eggplant.
"Broccoli and Asparagus Soup"
Ingredients
2-3 cups of Broccoli
1-1/2 cups of asparagus
2-3 cups of chicken broth
1-1/2 Tablespoons of Extra Virgin Olive Oil
2 Tablespoons of cornstarch or rice flour
salt and pepper to taste
2 cups rice dream(plain)
Method
First I make chicken stalk by combining chicken broth with , 1 small onion
finely chopped ,2 celery stalks chopped, 2 chopped carrots and let simmer
for 1/2 hour and then strain and set aside liquid.
In a large sauce pan I add the broccoli and asparagus to the broth and
boilit until vegetables are soft.You then blenderize this mixture to a
smoothconsistency. In the large saucepan I add the oil and cornstarch and
salt and pepper and slowly add the Rice Dream until smooth and thickened.
then add the vegetable mixture and warm to serving temperature. Garnish with
lemon or broccoli trees.We all love this recipy and have it for special occasions
with soup first and then dinner and reminisce while eating it about the good
old days on a high fat diet with all the goodies and now this is our goody!
"Wild Rice and Sauteed Oriental Vegetables"
Ingredients
1 tablespoon extra virgin olive oil
1 chopped onion
1 tsp crushed garlic
1/3cup wild rice
1/3 cup white rice
1 3/4 chicken stock(I use the same recipy here as the one in the above recipy)
1 cup chopped broccoli
1 cup chopped asparagus
2-3 chopped green onions
Method
In non stick pan saute olive oil and garlic and onion for 3 minutes or
until softened. Add wild rice and white rice,saute until golden
approximately 3 minutes.
Add the chicken stock; cover and simmer until rice is tender about 40
minutes add more stock if mixture dries out too quickly.Place in serving bowl.
In large skillet, add a little olive oil, saute broccoli and asparagus with
more garlic if you want till vegetables are tender crisp . Add to rice and
mix. Sprinkle with green onion. A great side dish.
"Ralph's Salad"
Ingredients
Extra virgin olive oil
Spinach
Salt to taste
"Corn and Basil Pancakes"
Ingredients
1/2 ro 3/4 cup white rice flour
1 egg white
Salt to taste
Enough rice milk to make a runny batter
1 tsp oil
Method
Mix in a food processor or by hand
If using a food processor, throw in about six leaves of fresh basil.
If no food processor, cut up the basil first.
Stir in 1/4 cup of corn, either frozen or canned.
Fry like normal pancakes.
