Lasagna (apologies to true lovers of Italian food)
This can be made with lamb mince, beef mince, or tuna.
Ingredients
1 green pepper
1 broccoli
1 to 2 cups spaghetti sauce
1 eggplant
1 onion
Garlic
Meat or fish
Rice crumbs (like bread crumbs) tossed with substitute margarine
Method
Slice broccoli and cook.
Slice green pepper.
Cook eggplant as you normally would.
Sauté onion and garlic.
Mix in meat or fish.
On bottom of casserole dish, put some sauce, then layer ingredients,
ending with the rice crumbs.
Bake at 180 degrees C or 350 degrees F for 30 minutes.
Zippy Zucchini with Pasta
Ingredients
1 cup of pasta (we use vegetable rice pasta)
1 onion
3 cloves garlic
2 zucchini (we have small ones in New Zealand)
Boiled Water from rice and vegetable pasta
Method
Pasta: Cook as instructed on the packet.
While the pasta is boiling, sauté the onion and garlic.
Slice the zucchini to your preferred thickness.
Add to the onion and garlic.
Cook the zucchini until brown on both sides.
Take about a quarter to a half cup of the boiling pasta water
and pour over the zucchini mixture.
This will thicken the zucchini mixture.
Stir and serve with the pasta.
Tuna Noodle Caserole
Ingredients
Canned Tuna Fish (in spring water)
1 cup Rice Vegetable Pasta
1 tbsp Rice Flour
1 cup Rice Milk
1/4 to 1/2 Diced Onion
1 to 2 sticks of Celery
Method
Cook the pasta.
While it is cooking, pour rice milk into a microwave proof dish.
Put in onion and celery.
Microwave on high for two minutes.
Whisk in rice flour.
Microwave on high for one minute.
Stir until smooth.
Put in tuna and pasta.
Microwave for another minute.
Season and serve.
