Welcome to the Baking Page


Sometimes a between meal snack can be both healthy and enjoyable. These recipes can also be used as dessert. Though the baking makes it a little more complicated, the results are yummie. Remember to visit us often to catch up with new recipes.


Baking Recipes and Dessert Recipes 

Master Mix 1 

8 cups white rice flour 
4 cups brown rice flour 
3 cups sweet rice flour 

Master Mix 2 

6 cups white rice flour 
4 cups brown rice flour 
3 cups sweet rice flour 
2 cups buckwheat flour 


Molasses Cookies 

Ingredients 

¼ c Margarine Substitute
1/8 - ¼ c Brown Sugar
1 egg substitute
¼ c molasses
1/8 cup rice milk
1 cup master mix 1
½ tsp baking soda
Vanilla flavouring to taste 

Method 

Cream sugar and Margarine Substitute.
Stir in dry ingredients.
Add vanilla.
Drop by spoonfuls onto a cookie tray
Bake at 160 degrees C or 350 degrees F for 8 - 10 minutes.

A variation to this recipe was sent in by Brenda Heussaff, who writes:
Hi! I just wanted to let you know that I just finished making this recipe
from your Baking page. However, I live in France and don't always find
ingredients like margarine and egg substitute. So, I substituted as
follows: 

Instead of margarine substitute
- 1/4 cup applesauce and 1 tsp olive oil

Instead of egg substitute
- 1 tsp arrowroot powder
and I added a 1/4 cup of ground nuts.
The cookies are delicious and I thought maybe someone could use this variation.
Also, Joan Embry's Banana Muffins are superb! 


Banana Muffins

Ingredients

Dry:
Sift into a bowl:
2 cups master mix plus corn meal.
3 tsps baking powder substitute
Sugar (however much you want - if you want to use it)


Wet:
In another bowl:
Mash three very ripe bananas
3 tsps egg replacement
1 cup rice milk
1/8c margarine substitute OR sunflower oil
Additions: You can add some of your favorite nuts if you want.

Method
Mix wet with dry ingredients together - do NOT over mix.
Put big spoonfuls into muffin tin.


Bake. 175 degrees C or 350 degrees F for 20 minutes.


Cool for five minutes and take out of tin.




Carob Muffins

Do not make this when you are trying to rid of candida.

Ingredients

Dry:
1 cup master mix 1
2 tbsp corn flour (maize)
2 tbsp carob
pinch salt
carob chips and pecans to suit your taste buds
1 tbsp baking powder substitute
2 tbsp egg replacement

Wet:
2 tbsp rice syrup
1 tbsp sunflower oil
½ to 1 cup Rice Milk

Method
Mix wet ingredients with dry ingredients. Do not over mix.
Put into muffin tray and bake at 180 degrees C or 350 degrees F for 30 minutes.
When done, take out of oven, and after five minutes, take out of muffin tray.



Banana muffins (Joan Embry)

Ingredients
5 bananas
1/3cup extra virgin olive oil
1/4 cup sugar
1 teaspoon baking soda
4 teaspoons baking powder
2 cups master mix (Master Mix I or 2)

Method
Mash the bananas and add other ingredients.
Beat and spoon into sprayed (low fat) muffin pan (12).Bake for 35 minutes at 325 degrees.



Joan’s Special Event Cake
The recipe for Banana Muffins can be used in a 8 inch round cake pan, floured and oiled and baked at 325 degrees for 60 minutes. Served with fresh fruit on top.



Ashton’s Applesauce and Raisin Muffins

Ingredients
2 cups unsweetened applesauce
1/4 cup sugar
1/4 cup raisins
1/4 cup extra virgin olive oil
1 teaspoon baking soda
4 teaspoons baking powder
2 teaspoons cinnamon
2 1/4 cups master mix (mix 1 or 2)

Method
Put applesauce into large bowl and add other ingredients.
Beat and spoon into sprayed (low fat) muffin pan (12). Bake for 40 minutes at 325 degrees.



Banana Muffins by Adriana Boss

Ingredients
Flour Mix
1 3/4 cups teff flour
1/4 cup tapioca flour
4 1/4 Tbsp arrowroot flour

Other Ingredients
5 ripe bananas
1/3 cup extra virgin olive oil
1/2 cup apple butter (available in health food store) or unsweetened apple sauce
1 teaspoon baking soda
4 teaspoons baking powder

Method
Mix bananas with oil, add baking soda and baking powder, add apple butter and then flour mixture. Beat 2-3 minutes. Cook in sprayed muffin tins at 325 degrees for 25 minutes.




Buns by Joan Embry

This one has yeast, if you must have buns.

Ingredients
Master Mix
8 cups white rice flour
4 cups brown rice flour
3 cups sweet rice flour
1 1/4 cups sugar
2 tablespoons salt
7 tablespoons xanthum gum

Method
Mix well in a very large bowl. Can be halved. Store in a cool dry place.

For a batch (this too, can be halved again).

Ingredients
4 1/2 cups master mix
4 eggs (substitute egg replacer here)
2 tablespoons Fermipan yeast (fast acting)
1/2 cup extra virgin olive oil
3 cups rice milk (warmed in microwave)

Method
Mix yeast with flour- add egg replacer and liquids. Beat 3 minutes with electric mixer on high. Rest 15 minutes or so in warm oven or other warm place. Beat 3 minutes more. Drop into greased large muffin tins (use low fat vegetable spray in muffin tins). Let rise 15-25 minutes in warm oven or warm place. Bake at 375- 400 degrees for 15 minutes.



Apple Pie by Adriana Boss

Ingredients
Nut Crust
2 tbsp extra virgin olive oil
2 tbsp apple butter(or maple syrup)
1/4 cup arrowroot flour
1/4 cup teff or buckwheat flour
1/2 tsp cinnamon
3/4 cup nuts (finely ground) or seeds (sunflower or pumpkins)

Method
Prepare and Cook Nut Crust
Mix oil and apple butter. Add mixed flours and stir with fork. Add cinnamon and ground nuts, again stir with fork. Pat down firmly into a 8 inch greased pie plate. Bake at 350 degrees for 5 minutes.

Apple Pie Filling

Ingredients
6-8 apples
1/2 cup raisins (can omit if sugar is restricted)
2 1/2 Tbsp. arrowroot powder
1/4 tsp salt
1 1/2 - 2 tsp cinnamon
1/3-1/2 cup apple butter or maple syrup

Method
Simmer apples and raisins with 1/4 cup water until apples are softened.
Drain and reserve liquid. When cool mix liquid with arrowroot powder and salt . Stir over medium heat until thickened. Add apples. Mix in apple butter and pour into nut crust. Bake at 375 for 25 - 40 minutes.



Buckwheat Pancakes by Adriana Boss

Ingredients
apple , pear, or peach juice
2 tsp extra virgin olive oil
1/4 cup buckwheat flour
1/4 cup brown rice flour
3 Tbsp arrowroot powder
2 tsp baking powder
1/8 tsp salt

Method

You can multiply this recipe, but when I do I add less baking powder.
Lightly oil the pan with extra virgin olive oil and spray it with a low fat non stick spray as it tends to stick.
Mix the dry ingredients and add oil and enough juice to make the consistency of a pancake batter. Prepare the pan and heat over medium to high temperature.
Cook like regular pancakes but be sure to prepare the pan before each pancake. We have them with maple syrup and cranberry syrup.
To make Blueberry pancakes- just add frozen or fresh blueberries to above recipe.
